AM fermentation maintenance

This is an morning punchdown/wine maintenance shift. You can let yourself in and do it any time between 7-10am as long as it gets done by mid-morning. All Garagistes must sign up for at least one punchdown/wine maintenance shift, so if this window of time looks good to you, grab it!

Please give the video above a look, even if you’ve punched down before. It’s a bigger-than-life (well, okay, exactly as big as life) walk-through of the entire process, complete with tips, tricks and pulse-pounding slo-mo action!

A punchdown guide – updated with a new back door code – is also in a downloadable PDF here. But feel free to arrange a time with Matt for an in-person (and masked) tutorial – just give him 24 hours’ notice.

OTHER IMPORTANT STUFF

  • Please text with Matt a few hours before your shift for any special instructions: 503-381-0066
  • You’ll only work on the red wines. You can leave the Viognier (by the back door) alone.
  • The quality of our wine is dependent on the care we take, so since you’ll only have one wine to do, take a little extra time to do the job right and leave everything better than when when you found it.
  • To help remember your shift, please download the “iCal” link in the confirmation email – that’ll insert this event right into the calendar of your choice.
  • Don’t forget to lock when you go: close the door behind you, enter the door code, and when you hear it engage, twist the deadbolt home.

COVID-19 NOTE: If you have a fever, cough, shortness of breath, or sudden loss of sense of smell, PLEASE STAY HOME and we’ll find someone else to take your shift. Otherwise, you’ll be punching down solo, so you’ll have the basement to yourself, but consider keeping the back door open for a little air circulation.
