Getting to be pretty lovely

I’ve been a doubter of this wine: too much agave/vegetal running through it in fermentation and in its youth. I tasted and smelled it every time I tasted it, so I’d written it off. But on a lark, I tried another yesterday, and it really turned my head. A little on the brooding side, not super complex but not simple, and the veg has integrated into the wine to give it the wine a sense of the whole plant. I’d never have guessed, but now I’m a convert.
